It’s hard to get enough fresh fruits and vegetables into our diets. With all of the processed, prepackaged and convenience foods that are so readily available, the stuff that is truly good for us sometimes gets left behind. One solution: drink your fruits and vegetables.

My mom had a rarely-used juicer dwelling waaay back in the cupboard. I brought it home with me after visiting her over Easter weekend. After a trip around the produce section at the local grocery store, I was ready to start juicing.

I generally use three carrots, an apple, and the rest can vary. I have tried cucumbers, beets, parsley, strawberries, mango, and orange. I just keep going until the glass fills up.

I will have to do a bit more experimenting with the beets. They provide a fabulous red color, but the beet taste (even from just a small piece) is quite overpowering.
The other day I made juice with carrots, an apple, some strawberries, and a few grape tomatoes. Very tasty – close in appearance and taste to V8 splash (without the added sugar, of course).
I appreciate the extra vitamins and minerals I know I’m getting through juicing. If you try it, just remember to continue to get your fiber by eating whole foods and whole grains. As I discover new and tasty fruit-veggie juice combinations, I’ll be sure to post them here.
